Broccoli concentrate for everyday use
Broccoli has recently been the focus of several studies on this drug. The sulfur compound in them, called sulforaphane, is primarily responsible for its health-promoting properties. The chemical and biochemical properties of this have been investigated and we now have a host of data available that confirmed the original assumption. To date, more than 500 studies have been performed to elucidate the mechanism of action and biological activity of sulforaphane and its precursor, glucorafanin.

It contains a lot of magnesium, potassium, and also beta-carotene. It contains more trace elements iron and selenium. Its most valuable compound is sulforaphane.
Broccoli germ contains the precursor of sulforaphane, glucorafanin. It can be converted to sulforaphane in two ways.
- When raw broccoli is chewed, it is formed by the enzymes it contains. These enzymes are killed around 40 degrees Celsius, so the process only takes place in the case of raw broccoli.
- After cooking or steaming, the effect is different. This enzyme is also found in the healthy intestinal tract and since glucoraphanin is not heat sensitive, the process also occurs in cooked broccoli.
Daily consumption
Whether one is consuming raw sprouts every day, or cooked broccoli or the extract in capsules, the focus is on everyday consumption if we are consuming it for some special reason and not for the sake of taste.
So healthy, but unfortunately not exactly one of the most popular vegetables. In addition to broccoli, sulforaphane is also found in cauliflower and cabbage - and other cabbages - but is found most in fresh broccoli.
